Lamb Chops with Cilantro Pesto. A quick and easy meal to prepare during the weekdays.
- 8 Lamb Loin Chops
- 2 cup cilantro
- 1 Poblano Chili – roasted, peeled, seeded
- 1 lime
- 4 garlic cloves
- 1 medium red onion
- 1/4 cup honey
- olive oil
- salt & Pepper
Place, cilantro, pepper, onion, garlic, lime, salt and pepper, in a food processor. Mix well. Add olive oil to emulsify the pesto. Pour in honey, (just enough to cut down on the heat of the pepper’s intensity).
Salt and pepper the lamb chops. Grill on medium to high heat, 3-5 minutes per side till desired doneness. Once done, let the chops set for 5-10 minutes to retain the juices.
Serve with your favorite vegetable.
