My Spanish marinate called Mojo, made from fresh citrus juice. Used in many Spanish dishes to marinate or as a sauce. Can be used on chicken, pork, beef, fish, and in many other Spanish recipes. I use this marinate on just about everything.
- 1 cup sour (Seville) orange juice or substitute
- with 1/2 cup sweet orange juice and 1/2 cup lime juice.
- 6-8 garlic cloves
- 1 medium red onion
- 1 cup fresh cilantro
- 1 jalapeno (optional)
- salt & pepper to taste
Place all ingredients in a blender till liquified.
Pour over proteins as a marinate. Mojo will keep in refrigerated for several weeks. Double or triple the ingredients to make larger batches.
Makes 2 cups
